Stuffed Beef Burrito Recipe – Quick, Easy, and Totally Delicious!

Ingredients
  

  • 1 lb ground beef I love using lean beef for this
  • 1 packet taco seasoning or use homemade seasoning if you prefer
  • 1 can refried beans this is optional, but it adds a creamy texture!
  • 1 ½ cups shredded cheddar cheese or a mix of cheeses if you prefer
  • 4 large flour tortillas
  • 1 cup salsa mild or spicy, totally your choice!
  • 1 cup sour cream for topping, or skip if you're not a fan
  • A few fresh toppings like shredded lettuce diced tomatoes, or jalapeños (optional)

Instructions
 

Step 1: Brown the Beef

  • Start by heating a skillet over medium heat. Add your ground beef and cook it until it’s nice and browned. This is when the magic happens—your kitchen will smell amazing! As the beef cooks, use a spoon or spatula to break it up into small crumbles. Once it's fully browned, drain off any excess fat if you need to.

Step 2: Add Taco Seasoning

  • Now comes the fun part—seasoning! Sprinkle in your taco seasoning, and mix it well with the beef. I like to add a little water (about ¼ cup) to make sure the seasoning really sticks to the beef and gives it that flavorful kick. Simmer for about 5 minutes, and you're done with the beef!

Step 3: Prepare the Tortillas

  • While the beef is simmering, warm up your tortillas. You can do this in the microwave for about 10-15 seconds or heat them on a dry skillet for a few seconds on each side. Warm tortillas are way easier to roll, and they give the burritos that soft, chewy texture.

Step 4: Assemble the Burritos

  • Here comes the fun part! Take one tortilla at a time and place a spoonful of the seasoned beef in the center. Add a couple of spoonfuls of refried beans (if you’re using them), then sprinkle on some shredded cheese. You want to make sure it’s loaded but not too much that it spills over when you roll it up.
  • Next, carefully fold the sides of the tortilla in and then roll it up from the bottom to the top. It’s like a little burrito gift waiting to be enjoyed! Repeat this process for the remaining tortillas.

Step 5: Bake for That Melty Goodness

  • Once your burritos are rolled up, place them seam-side down on a baking sheet. Pop them into the oven at 350°F (175°C) for about 10 minutes or until the cheese is fully melted, and the burritos are golden brown on top. If you want extra cheesy burritos, sprinkle a little more cheese on top before baking.

Step 6: Add Your Toppings and Enjoy!

  • When the burritos are done, take them out of the oven and let them cool for a minute. Then, it’s time to top them off with whatever you like! A dollop of sour cream, some fresh salsa, and a few slices of avocado really take these burritos to the next level. And don’t forget to serve them with a side of your favorite chips or a refreshing salad.
