Spicy Mexican Corn Bites Recipe: A Flavorful Snack You’ll Want to Make Again and Again!

  • 2 cups corn kernels fresh or frozen
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • ¼ cup chopped cilantro
  • ¼ cup finely chopped onion
  • 1 small jalapeño pepper finely chopped (optional for extra heat)
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • 1 egg
  • Salt and pepper to taste
  • Olive oil spray for baking

Step 1: Prep the Corn

  • If you’re using frozen corn, make sure to thaw it before starting. If fresh corn is in season, you can definitely use that too! Simply remove the kernels from the cob using a sharp knife.

Step 2: Mix the Ingredients

  • In a large bowl, add the corn, breadcrumbs, Parmesan cheese, chopped cilantro, onion, and jalapeño (if you like a little extra spice). Then, sprinkle in the chili powder, cumin, garlic powder, and a pinch of salt and pepper. Now crack the egg into the bowl and mix everything together until well combined. You should have a mixture that holds together when you shape it into small balls.

Step 3: Shape the Corn Bites

  • Once the mixture is ready, it’s time to shape your corn bites. Use your hands to form small balls, about 1 to 1.5 inches in diameter. If you find the mixture a bit sticky, you can wet your hands with a little water to make the process easier.

Step 4: Bake to Perfection

  • Preheat your oven to 400°F (200°C). Place the corn bites on a baking sheet lined with parchment paper. Lightly spray the tops with olive oil, then pop them in the oven. Bake for 15-20 minutes or until they’re golden and crispy on the outside. You may want to flip them halfway through for even browning.

Step 5: Serve and Enjoy!

  • Once they’re out of the oven, let them cool for a few minutes before serving. These corn bites are perfect on their own, but you can also serve them with a side of salsa, sour cream, or a squeeze of lime for an extra burst of flavor.
