Line an 8x8-inch baking pan with parchment paper. This makes it so much easier to lift the bars out later. Trust me, you’ll thank yourself for this small step.
Step 2: Mix the Base
In a medium saucepan, melt the peanut butter, honey, and coconut oil over low heat. Stir until everything is smooth and well combined. Once it’s all melted, remove it from the heat and stir in the vanilla extract and salt.
Step 3: Add the Oats
Pour the oats into the peanut butter mixture and stir until they’re evenly coated. This is where the magic starts to happen.
Step 4: Create the Chocolate Layer
Melt the chocolate chips in the microwave or using a double boiler. If you’re microwaving, heat in 20-second intervals, stirring in between to prevent burning.
Step 5: Assemble the Bars
Press half of the oat mixture into the prepared pan. Pour the melted chocolate over it and spread it out evenly. Then, press the remaining oat mixture on top, making sure it’s firm and even.
Step 6: Chill
Pop the pan into the fridge for at least 2 hours or until the bars are completely set. Patience is key here, but it’s so worth the wait!
Step 7: Slice and Serve
Once the bars are set, lift them out using the parchment paper and slice them into squares. Enjoy them straight from the fridge or let them sit at room temperature for a few minutes for a softer bite.
