  • 2 cans of sweet corn drained – no one likes a watery dip!
  • 1 cup of sour cream – the creamy base of the dip.
  • 1 cup of mayonnaise – adds richness and smoothness.
  • 1 cup of shredded cheddar cheese or use a Mexican cheese blend if you want to get extra cheesy.
  • 1 small can of diced green chilies – for that little burst of heat.
  • 1 tablespoon of lime juice – adds a refreshing tang.
  • ½ teaspoon of chili powder – for a touch of smokiness.
  • ½ teaspoon of garlic powder – just enough to give it a savory depth.
  • ¼ teaspoon of cayenne pepper – for a little bit of heat but you can skip this if you want a milder dip.
  • ¼ cup of chopped fresh cilantro – fresh cilantro really brings this dip to life. If you’re not a fan of cilantro no worries – you can leave it out!
  • ½ red onion finely chopped (optional, but I think it adds a nice texture and sweetness).

Step 1: Prep the Corn

  • First thing’s first – grab your two cans of sweet corn and drain them well. It’s important to drain the corn thoroughly so your dip doesn’t get too watery. You don’t want a soggy dip, do you? If you have fresh corn, that’s even better! Just cook the corn, slice it off the cob, and you’re good to go. But canned corn works just as well and makes this recipe even quicker.

Step 2: Mix the Creamy Ingredients

  • In a large mixing bowl, start by combining the sour cream and mayonnaise. These are the base of your dip, and they’re going to give it that creamy, smooth texture. Stir them together until they’re well blended. Then, add the lime juice, chili powder, garlic powder, and cayenne pepper (if you’re using it). This is where the flavor really starts to come together! The spices add just the right balance of warmth and tanginess.

Step 3: Add the Corn and Cheese

  • Now, it’s time to stir in the sweet corn and shredded cheddar cheese. The cheese gives the dip a nice melt-in-your-mouth texture, and it adds that rich, cheesy flavor we all love.   • Once you’ve got everything mixed up and seasoned just the way you like it, cover the bowl with plastic wrap and pop it in the fridge. Let it chill for at least an hour.
