Melt-in-Your-Mouth Chicken Breast Recipe

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup mayonnaise or Greek yogurt if you’re feeling healthy-ish
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional garnish: Fresh parsley or chives

Step 1: Preheat and Prep

  • Start by preheating your oven to 375°F (190°C). While the oven warms up, line a baking dish with foil or lightly grease it. This makes cleanup so much easier—and who doesn’t love that? If I can save myself from scrubbing dishes at the end of the day, I’m all for it.

Step 2: Mix the Topping

  • In a medium bowl, mix together the mayonnaise, Parmesan cheese, garlic powder, onion powder, and paprika. Trust me, this mixture smells amazing already. Add a pinch of salt and pepper to bring out the flavors. If you’re feeling adventurous, you can even toss in a little bit of Italian seasoning or a dash of hot sauce for some extra pizzazz.

Step 3: Prepare the Chicken

  • Place your chicken breasts in the prepared baking dish. If they’re on the thicker side, consider pounding them out a bit for even cooking. No one likes a dry edge and a raw middle—been there, done that. This step ensures that the chicken cooks evenly and stays juicy throughout.

Step 4: Spread the Mixture

  • Generously spread the mayo-Parmesan mixture over each chicken breast. Make sure every inch is covered. This is where the magic happens. That creamy topping not only adds flavor but also creates a seal that keeps the chicken incredibly moist.

Step 5: Bake to Perfection

  • Bake the chicken in the preheated oven for 25-30 minutes, depending on the size of your chicken breasts. The topping should be golden and bubbly, and the chicken should reach an internal temperature of 165°F (74°C). If you’re like me and love a little extra color, switch on the broiler for the last 2-3 minutes.

Step 6: Garnish and Serve

  • Sprinkle some freshly chopped parsley or chives on top for a pop of color and extra flavor. Serve warm with your favorite sides. Trust me, when you set this dish on the table, it’s going to get some serious "oohs" and "aahs."
