Step 1: Prep Your Ingredients

  • Start by shredding or chopping your cooked chicken. If you’re using rotisserie chicken, it’ll save you a ton of time. Next, dice your avocados, chop the cilantro, and slice up the red onion and cherry tomatoes.

Step 2: Mix the Base

  • In a large bowl, mash one of the avocados with the Greek yogurt and lime juice. This creates a creamy, flavorful dressing that’s healthier than using mayo. Add a pinch of salt and pepper to taste.

Step 3: Combine Everything

  • Gently fold in the chicken, the second diced avocado, red onion, cherry tomatoes, and cilantro. If you’re using optional ingredients like cucumber or jalapeño, now’s the time to toss those in too. Mix until everything is evenly coated with the avocado dressing.
