Garlic Butter Shrimp Scampi Lasagna – A Delicious Twist on Comfort Food!

Ingredients
  

  • 12 lasagna noodles feel free to use no-boil noodles if you want to save time!
  • 1 lb large shrimp peeled and deveined
  • 4 tablespoons butter
  • 5 cloves garlic minced
  • ½ teaspoon crushed red pepper flakes optional – but adds a little kick!
  • 1 cup heavy cream
  • 1 cup chicken broth or seafood broth for even more flavor
  • ½ teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh parsley chopped (for garnish)
  • Salt and pepper to taste

Instructions
 

Step 1: Prepare the Lasagna Noodles

  • Start by cooking your lasagna noodles according to the package instructions. If you’re using regular noodles, be sure to cook them al dente. No one wants mushy lasagna, right? Once they’re done, drain them and set them aside. If you're using no-boil noodles, just make sure to soak them in some warm water while you prep the rest of the ingredients.

Step 2: Cook the Shrimp

  • While your noodles are cooking, heat a tablespoon of butter in a large skillet over medium heat. Add your shrimp, season with a little salt and pepper, and cook for about 2 minutes on each side until they're pink and opaque. Once they're done, remove them from the skillet and set them aside. Don’t worry if there’s some leftover garlic butter in the skillet – we’ll use that in just a bit.

Step 3: Make the Garlic Butter Sauce

  • In the same skillet, melt the remaining butter and add the garlic. Sauté the garlic for about a minute, just until it’s fragrant (but not burnt, we want it golden, not dark!). Next, add the chicken broth, heavy cream, lemon zest, and lemon juice to the skillet. Stir it all together, scraping up any bits of shrimp or garlic that might be stuck to the bottom of the pan. Let the sauce simmer for about 5 minutes until it thickens up just a little bit.

Step 4: Assemble the Lasagna

  • Now comes the fun part! Preheat your oven to 375°F (190°C), and grab a baking dish – a 9x13-inch one works perfectly.
  • Start by spreading a little bit of the garlic butter sauce on the bottom of the baking dish to prevent the noodles from sticking. Then, layer your lasagna as follows:
  • First, add a layer of lasagna noodles.
  • Next, spread a layer of the ricotta cheese mixture (combine ricotta with some salt and pepper, and a little mozzarella if you like).
  • Add half of the shrimp on top of the ricotta.
  • Pour about a third of the garlic butter sauce over the shrimp.
  • Repeat with another layer of noodles, ricotta, shrimp, and sauce.
  • Top with a final layer of noodles, and pour the remaining garlic butter sauce on top. Sprinkle with the remaining mozzarella and Parmesan cheese.

Step 5: Bake It to Perfection

  • Cover the lasagna with aluminum foil and bake it in the preheated oven for about 25 minutes. After that, remove the foil and bake for another 10-15 minutes until the top is golden and bubbly. It’s going to smell amazing, and you’ll be counting down the minutes until you can dig in.

Step 6: Garnish and Serve

  • Once your lasagna is done, remove it from the oven and let it sit for about 10 minutes. This will help everything set up nicely, so it’s easier to cut into. Garnish with fresh parsley, and if you like a little extra lemon flavor, a quick squeeze of lemon juice on top never hurts!
