English Muffin Breakfast Pizza Recipe

Ingredients
  

  • 4 English muffins split (whole wheat works great if you’re feeling a bit healthy!)
  • 4 large eggs
  • 1 cup shredded cheese cheddar, mozzarella, or your favorite blend
  • ½ cup marinara or pizza sauce
  • Optional toppings: diced veggies like bell peppers onions, mushrooms, or spinach
  • Salt and pepper to taste
  • Olive oil spray or a drizzle

Step 1: Prepping the Muffins

  • Start by splitting your English muffins in half. Place them on a baking sheet, cut side up. Lightly spray or drizzle olive oil over the tops to give them a nice crisp texture when baked. Pop them under the broiler for 2-3 minutes until they’re just slightly toasted.

Step 2: Cooking the Eggs

  • While your muffins are toasting, crack the eggs into a bowl and whisk them up with a pinch of salt and pepper. Scramble them in a non-stick skillet over medium heat until they’re just cooked but still soft. Set them aside.

Step 3: Assembly Time

  • Spread a spoonful of marinara sauce onto each English muffin half. Next, layer on the scrambled eggs evenly. Sprinkle a generous amount of shredded cheese on top and add any extra toppings you’re using. I personally love adding a handful of chopped spinach and some diced tomatoes for a fresh twist.

Step 4: Bake to Perfection

  • Bake your pizzas in a preheated oven at 375°F for about 8-10 minutes, or until the cheese is melted and bubbly. If you want that golden cheese finish, broil them for an extra minute—just keep an eye on them so they don’t burn!
