Instructions
Step 1: Preheat Your Oven
I always start by preheating my oven to 400°F (200°C). A hot oven is key to getting those perfect roasted veggies and chicken.
Step 2: Prepare Your Chicken and Veggies
Next, slice the chicken into strips about the same size as your bell peppers and onions. This ensures everything cooks evenly. Then, slice the peppers and onions into strips as well.
Once you have everything prepped, toss the chicken and veggies in a little olive oil and fajita seasoning. I use about 2 tablespoons of fajita seasoning for a good kick of flavor, but you can add more or less depending on how much spice you like. Toss it all together in a large bowl until everything is evenly coated.
Step 3: Spread Everything on the Sheet Pan
Now, lay everything out on a sheet pan in a single layer. Don’t overcrowd the pan, or your chicken and veggies won’t roast properly. It’s important to give them some space so they get that nice roasted texture.
Step 4: Roast in the Oven
Pop the sheet pan in the oven and roast for 20–25 minutes, stirring halfway through to ensure even cooking. You’ll know it's ready when the chicken is fully cooked through (it should reach an internal temperature of 165°F) and the veggies are tender and slightly caramelized.
Step 5: Squeeze Lime Juice
Once everything is done, take the sheet pan out of the oven and squeeze some fresh lime juice over the top. It really brightens up the flavors and gives everything a nice zesty finish.
Step 6: Serve and Enjoy
Now for the fun part: serving! You can serve these fajitas in soft flour tortillas, over rice, or even in a salad. Add a dollop of sour cream, some salsa, and maybe a sprinkle of cheese if you’re feeling fancy. The options are endless!
