Easy Seafood Lasagna Recipe: A Flavorful Twist on a Classic

Ingredients
  

  • 9 lasagna noodles I like to use the no-boil kind for ease, but you can use regular ones if you prefer
  • 1 lb shrimp peeled and deveined
  • 1 lb crab meat or a mix of your favorite seafood—scallops work great too!
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup Parmesan cheese
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 cups heavy cream
  • 2 cups marinara sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Step 1: Cook the Lasagna Noodles

  • First, cook the lasagna noodles. If you’re using regular noodles (not the no-boil kind), just cook them according to the package instructions. Once done, drain them and set them aside. If you’re using no-boil noodles, you're already ahead of the game!

Step 2: Prepare the Seafood

  • In a large pan, heat up some butter and olive oil. Add in your onions and garlic and sauté them until they’re soft and fragrant. Then, toss in the shrimp and cook them for about 2-3 minutes until they’re just pink and opaque. Be careful not to overcook them—shrimp cook quickly!
  • Next, add in your crab meat (or any other seafood you’re using) and give everything a gentle stir. You don’t need to cook the seafood completely here because it will continue to cook in the oven. Just heat it through and set aside.

Step 3: Make the Creamy Sauce

  • Now it’s time to make the creamy base for the lasagna. In the same pan (no need to dirty another dish!), pour in the heavy cream and marinara sauce. Stir in the basil and oregano, and let the sauce simmer for a few minutes until it thickens slightly. Season it with salt and pepper to taste. This creamy sauce is what makes the lasagna so dreamy—rich, but not too heavy!

Step 4: Layer the Lasagna

  • Preheat your oven to 375°F (190°C). Now comes the fun part: layering the lasagna!
  • Spread a little bit of the sauce at the bottom of your baking dish to prevent sticking.
  • Layer 3 lasagna noodles over the sauce.
  • Add a layer of the seafood mixture, then top with a layer of ricotta cheese and a sprinkle of mozzarella and Parmesan.
  • Repeat the layers until you’ve used all your ingredients, finishing with a generous layer of mozzarella on top.
  • Make sure to finish with the cheese so it gets all melty and golden brown in the oven.

Step 5: Bake to Perfection

  • Cover the lasagna with foil and bake it for 25 minutes. After that, remove the foil and bake for another 15 minutes to let the cheese bubble up and brown a bit. I like to let the lasagna sit for about 10 minutes before serving. This helps everything set and makes it easier to slice.
