Easy Hamburger Rice Casserole Recipe

Ingredients
  

  • 1 pound ground beef
  • 1 small onion diced
  • 1 green bell pepper diced (optional)
  • 2 cups cooked rice white or brown, your choice
  • 1 can 10.5 oz cream of mushroom soup
  • 1 can 10.5 oz cream of chicken soup
  • 1 cup shredded cheddar cheese plus extra for topping
  • ½ cup milk
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 teaspoon paprika optional, for a little extra flavor

Step 1: Preheat Your Oven

  • Set your oven to 350°F (175°C) and grease a 9x13-inch baking dish. Trust me, you’ll be glad you prepped it before things get messy.

Step 2: Cook the Ground Beef

  • In a large skillet, cook the ground beef over medium heat until browned. Add the diced onion and bell pepper and cook for another 3-4 minutes until softened. Drain off any excess grease.

Step 3: Mix the Ingredients

  • In a large mixing bowl, combine the cooked rice, ground beef mixture, cream of mushroom soup, cream of chicken soup, ½ cup of cheese, milk, garlic powder, salt, pepper, and paprika. Stir until everything is evenly coated.

Step 4: Assemble the Casserole

  • Pour the mixture into your prepared baking dish and spread it out evenly. Sprinkle the top with more shredded cheddar cheese – don’t be shy, a cheesy top layer is the best part!

Step 5: Bake

  • Bake the casserole for 25-30 minutes or until it’s bubbly and the cheese is melted to golden perfection. Let it cool for 5 minutes before serving.
