Easy Boat Dip (Rotel Ranch Dip) – A Party Favorite!

Ingredients
  

  • Cream Cheese – This is the base of the dip giving it that rich, creamy texture.
  • Ranch Seasoning Packet – Yes we’re using the packet! It’s simple, flavorful, and takes the guesswork out of making a good ranch dip.
  • Rotel Tomatoes with Green Chilies – This adds a nice kick to the dip and brings all the flavors together.
  • Sour Cream – For an extra creamy consistency.
  • Shredded Cheese – I prefer a blend of cheddar and mozzarella for a nice balance of flavor.
  • Green Onions – These give the dip a bit of freshness and crunch.

Step 1: Prepare the Cream Cheese

  • Start by softening your cream cheese. If you’ve forgotten to pull it out of the fridge in time (guilty as charged), you can microwave it for about 20-30 seconds to soften it up. It doesn’t need to be totally melted—just soft enough to mix easily.

Step 2: Mix the Ingredients

  • In a large bowl, combine the softened cream cheese with the ranch seasoning packet, sour cream, and Rotel tomatoes (drain them first, but keep a little bit of the juice to get a smoother texture if you want). Stir everything together until it’s well blended.
  • This is the fun part because you can already start smelling how good it’s going to be.

Step 3: Add the Cheese and Green Onions

  • Now, fold in the shredded cheese and chopped green onions. I like to add a little extra cheese because, well, who doesn’t love more cheese? Mix everything together until it’s evenly distributed.

Step 4: Chill and Serve

  • For the best results, refrigerate the dip for at least 30 minutes before serving. This helps the flavors meld together and really makes the dip come alive. But honestly, if you’re in a rush, you can skip this step—it’ll still taste great.
  • Serve it with tortilla chips, crackers, or even fresh veggies like carrots and celery. Whatever works for you!
