Cheesy Chicken Garlic Bread Sandwich: The Ultimate Comfort Meal

  • 2 boneless skinless chicken breasts (or thighs if you prefer dark meat)
  • 4 slices of your favorite garlic bread store-bought or homemade
  • 1 cup of shredded mozzarella cheese extra cheese never hurts!
  • ½ cup of shredded cheddar cheese
  • 1 tablespoon of olive oil or butter, depending on your preference
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish optional, but adds a pop of color

Step 1: Prepare the Chicken

  • Start by seasoning your chicken. I like to keep it simple with garlic powder, onion powder, and a pinch of salt and pepper. You can also add a little paprika or Italian seasoning if you like extra flavor. Heat a tablespoon of olive oil in a pan over medium heat, then cook the chicken until it’s golden brown on both sides and fully cooked through (about 6-7 minutes per side, depending on the thickness of the chicken). Once it's cooked, remove it from the pan and set it aside to rest for a few minutes.

Step 2: Toast the Garlic Bread

  • While the chicken is cooking, you can toast the garlic bread. I like to use thick slices for this sandwich because they hold up better to all the toppings. You can either toast them in a toaster, grill them on a pan, or even pop them in the oven for a few minutes. Whatever you do, make sure they’re crispy and golden—this is key to getting that perfect crunch when you bite into your sandwich.

Step 3: Shred the Chicken

  • Once your chicken has cooled just enough to handle, shred it using two forks. I find that shredding the chicken gives it that perfect texture for the sandwich, and it makes it easier to mix with the cheese later on.

Step 4: Assemble the Sandwich

  • Now comes the fun part: building the sandwich! Take one slice of your toasted garlic bread and place a generous amount of shredded chicken on top. Then, layer on your cheeses—mozzarella for that stringy, melty factor, and cheddar for a little extra bite. Place the second slice of garlic bread on top to form your sandwich.

Step 5: Melt the Cheese

  • To melt the cheese and get everything nice and toasty, return the sandwich to the pan and cook over medium heat for about 3-4 minutes per side, pressing it down gently with a spatula. You want the outside to be golden and crispy, and the inside to be ooey-gooey with melted cheese.

Step 6: Serve and Enjoy

  • Once your sandwich is crispy and the cheese is perfectly melted, remove it from the pan. If you want to get fancy (but not too fancy), you can sprinkle some fresh parsley or basil on top for a little burst of color. Cut the sandwich in half, grab a napkin (because this is going to be messy in the best way), and enjoy!
