Cheesy Chicken Garlic Bread Sandwich: The Easy Dinner You’ll Want to Make Tonight

Step 1: Season the Chicken

  • Let’s start by prepping the chicken. First, grab those boneless chicken breasts and give them a quick rinse under cold water. Then, pat them dry with a paper towel. This is important because you want the seasoning to stick well.
  • Season the chicken with salt, pepper, garlic powder, and Italian seasoning. Make sure to season both sides of the chicken for maximum flavor. If you’ve got a few extra minutes, let the chicken sit for about 10-15 minutes to marinate. But if you’re in a rush, no problem – just season and go!

Step 2: Cook the Chicken

  • Now, grab a skillet or frying pan and heat a little olive oil over medium-high heat. Once the oil’s hot, place the chicken breasts in the pan and cook them for about 6-7 minutes on each side, depending on thickness. You want the outside to be golden brown and crispy, while the inside stays juicy and tender.
  • A quick tip here: if your chicken breasts are particularly thick, you can butterfly them or slice them in half horizontally to make them cook faster and more evenly.
  • Once your chicken is cooked through (and beautifully golden on both sides), remove it from the pan. We’ll be slicing it later and layering it on the garlic bread, but for now, set it aside and let it rest.

Step 3: Toast the Garlic Bread

  • While your chicken is cooking, it's time to take care of the garlic bread. Now, if you’re using store-bought garlic bread, you’ll want to follow the instructions on the package to get it crispy and golden. I usually pop mine in the oven at 375°F for about 5-7 minutes, or until it’s perfectly crispy.
  • If you're making your own, spread some butter on the bread and sprinkle a little garlic powder over it. Place it under the broiler for about 2-3 minutes – keep a close eye on it because it can burn quickly!

Step 4: Assemble the Sandwich

  • Now for the fun part: assembling everything! First, slice your cooked chicken into strips or bite-sized pieces.
  • Take one slice of your freshly toasted garlic bread and lay it on a baking sheet. Layer the sliced chicken on top of the bread, then sprinkle a generous amount of shredded mozzarella cheese on top. Don’t be shy with the cheese – it’s the star of the show!
  • If you’re feeling extra fancy, sprinkle a little parmesan cheese on top for an extra burst of flavor.
  • Top it off with your second slice of garlic bread, and now it’s time for the sandwich to hit the oven. Pop the whole thing in the oven at 375°F for about 5 minutes, or until the cheese is melted and bubbly. You’ll know it’s ready when that cheese is oozing out from the sides – I’m already hungry just thinking about it!
