Cheesy Beef Burritos with Fries: A Simple and Amazing Recipe for Busy Days

For the Burritos:

  • 1 pound ground beef
  • 1 packet taco seasoning mix or your favorite homemade blend
  • ½ cup water
  • 1 cup shredded cheese cheddar, Monterey Jack, or a mix
  • 1 cup cooked rice optional, but it’s a great filler
  • 6 large flour tortillas
  • ½ cup sour cream
  • 1 cup chopped lettuce
  • 1 cup diced tomatoes

For the Fries:

  • 3 large potatoes cut into thin strips (or a bag of frozen fries for convenience)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: Paprika or garlic powder for seasoning

Step 1: Prep the Fries

  • Let’s start with the fries since they’ll take the longest. If you’re making homemade fries:
  • Preheat your oven to 425°F (220°C).
  • Toss the potato strips with olive oil, salt, pepper, and any other seasonings you like.
  • Spread them out on a baking sheet in a single layer and bake for 25-30 minutes, flipping halfway through.
  • If you’re using frozen fries, follow the package instructions—easy peasy.

Step 2: Cook the Beef

  • While the fries are baking, let’s work on the beef filling:
  • Heat a skillet over medium heat and add the ground beef.
  • Cook until browned, breaking it up with a spatula as it cooks.
  • Drain any excess grease, then stir in the taco seasoning and water. Let it simmer for 5 minutes until the sauce thickens.

Step 3: Assemble the Burritos

  • Now for the fun part:
  • Warm the tortillas in the microwave or on a skillet for easier folding.
  • Spread a dollop of sour cream in the center of each tortilla.
  • Add a scoop of the seasoned beef, followed by cheese, rice (if using), lettuce, and tomatoes.
  • Fold the sides of the tortilla inwards, then roll it up tightly from the bottom. Pro tip: Don’t overfill your burritos, or they’ll be tricky to wrap.

Step 4: Serve

  • By the time you’ve finished assembling the burritos, your fries should be ready. Plate everything up and dig in! If you’re feeling fancy, serve the burritos with a side of salsa or guacamole.
