Cajun Grilled Chicken with Alabama White Sauce

For the Cajun Grilled Chicken:

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Alabama White Sauce:

  • ½ cup mayonnaise
  • ¼ cup apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon horseradish optional but adds a nice kick!
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon sugar
  • A squeeze of fresh lemon juice

Step 1: Prep the Chicken

  • Start by patting your chicken breasts dry with a paper towel. This helps the seasoning stick better. In a small bowl, mix the Cajun seasoning, garlic powder, paprika, salt, and black pepper. Drizzle the olive oil over the chicken, then rub the seasoning mix all over each piece. Make sure every inch of the chicken is coated—no naked spots allowed!

Step 2: Fire Up the Grill

  • Preheat your grill to medium-high heat. If you’re using a grill pan indoors, heat it over medium-high heat as well. Place the chicken on the grill and let it cook for about 6-7 minutes per side, depending on the thickness. You’ll know it’s ready when the internal temperature hits 165°F.
