Buffalo Chicken Flatbread Pizza Recipe: A Game-Changer for Busy Nights

Ingredients

  • 2 flatbreads I love using store-bought for convenience, but homemade works too if you’ve got the time
  • 2 cups cooked chicken breast shredded (I like to use rotisserie chicken for speed, but any leftover chicken works perfectly)
  • ¼ cup buffalo sauce use your favorite brand, or make your own if you’ve got the time!
  • ½ cup ranch dressing the creamy goodness is what makes this pizza
  • 1 ½ cups shredded mozzarella cheese because who can say no to extra cheese, right?
  • ½ cup crumbled blue cheese this gives it that classic buffalo flavor – totally optional, but highly recommended
  • ¼ cup green onions sliced (they add the perfect touch of freshness and color)
  • 1 tablespoon olive oil for brushing on the flatbreads
  • Salt and pepper to taste

Instructions

Step 1: Prepare the Chicken

  • Let’s talk chicken. The first step is to get your chicken ready. If you're starting from scratch, I recommend grilling or boiling the chicken breast. But if you’re short on time (and let’s be honest, who isn’t?), grab a rotisserie chicken from the store. It’s a real time-saver and still tastes incredible.
  • Shred the chicken using two forks, and then toss it in the buffalo sauce. I like to use just enough sauce to coat the chicken, but feel free to adjust based on how spicy you like things. This is your pizza, so make it as bold as you want! I personally love that perfect balance of heat and tang, but if you're sensitive to spice, feel free to add a little less buffalo sauce.
  • The best part? If you have leftover chicken from another meal, this is the perfect recipe to use it up. Shredded chicken is such a versatile ingredient, and it adds a lot of flavor to this dish without any extra hassle.

Step 2: Prep the Flatbread

  • Now, grab your flatbreads. Brush each one lightly with olive oil on both sides. This will give the crust a nice golden color when it bakes, and it adds just a hint of flavor. You can also season the flatbread with a pinch of salt and pepper if you’d like, but it’s optional.
  • The beauty of this recipe is that the flatbread acts as the base, saving you the time of rolling out dough and waiting for it to rise. Plus, flatbreads tend to bake up nice and crispy, making them the perfect base for any toppings.
  • Pop the flatbreads onto a baking sheet and preheat your oven to 400°F (200°C). If you’ve got a pizza stone, that’s even better! It’ll give you a crispier crust, but no stress if you don’t have one – a regular baking sheet works just fine.

Step 3: Assemble the Pizzas

  • Once the flatbreads are prepped and ready, spread a generous layer of ranch dressing over each one. It’s the perfect creamy base that balances the spicy buffalo sauce. You don’t want to skimp here; the ranch adds so much flavor. Plus, it complements the heat of the buffalo sauce in the best way.
  • Next, pile on the buffalo chicken. Don’t be shy – load it up! The chicken, coated in that tangy buffalo sauce, is what makes this pizza so irresistible. Spread it evenly so every bite gets that perfect amount of heat.
  • Then, sprinkle the shredded mozzarella cheese over the top, making sure it’s evenly spread out. This will melt beautifully and create that cheesy goodness that we all love on a pizza. But don’t stop there! If you’re a fan of blue cheese (like me), sprinkle it on top as well. The crumbles melt beautifully and give an extra kick to the pizza. If you’re not into blue cheese, feel free to leave it off or swap it out for a different cheese. Gouda works nicely if you want something a little smokier!

Step 4: Bake to Perfection

  • Pop the assembled flatbreads into the oven for about 10-12 minutes, or until the cheese is melted and bubbly. The edges of the flatbread will start to crisp up, and that’s when you know it’s time to take them out.
  • Don’t worry if your flatbreads look a little bubbly – it’s a good thing! That means the cheese is perfectly melted and the ranch dressing has worked its magic. As the flatbreads bake, the buffalo sauce and cheese will meld together, making every bite a perfect combination of creamy, spicy, and cheesy.
  • If you’re not sure if it’s done, just give the edges a little check. They should be nice and crispy, with a golden-brown color. That’s your sign to pull them out and let them cool for a minute.

Step 5: Finish It Off

  • Once out of the oven, sprinkle some sliced green onions over the top for a burst of freshness and color. They add a nice contrast to the rich, spicy buffalo chicken and cheese. Plus, they look so pretty on the pizza!
  • For an extra zing, feel free to drizzle a little more buffalo sauce on top. That’s the fun part about this recipe – it’s totally customizable. You can make it as spicy as you want or dial it back to your comfort zone. I sometimes add a dash of hot sauce if I want more heat, but you can totally skip that if you prefer a milder flavor.
  • If you have a few extra minutes, you can also serve your buffalo chicken flatbread pizza with a side of veggies or a cool, crisp salad. It’s the perfect way to balance out the heat and add some extra freshness to the meal.
